Tomorrow is Hallowe'en and for me that means office potluck lunch! Last week I signed up with the best of intentions of making some fabulously decorated gourmet cupcakes, but of course, time got the best of me. Tonight, as of 8pm, I had no cupcakes, in fact not even all of the ingredients for the most basic of cupcakes, and really no idea what I was going to do.
I had resigned to the fact that these were going to be the simplest of cupcakes, and almost even just went and bought some, but then thanks to the power of the internet I found a super easy halloween themed cupcake idea and I couldn't resist - vampire bite cupcakes!
Mine are a bit sloppy since I was rushing so much, but these are the simplest Hallowe'en treats you could possibly make. I just baked up the cupcakes from a box, iced them with white icing from a tub, and bought one little squeeze bottle of red gel icing. I squeezed 2 drops of red icing on each cupcake and used a pointy knife to run through the red to create the dripping blood effect.
Voila! - Vampire Bitten Cupcakes!

Love it! I can't wait for tomorrow. I have two young boys, and my oldest is giddy about the gobs of candy on the horizon.
